BROTHER GEORGE BBQ

BROTHER GEORGE BBQ

By: Aubrey Gibson

You can smell the meat cooking and the sauce brewing from a mile away. You can hear the music playing as you get closer. For almost two and a half years now, Brother George’s BBQ has been a favored staple upon entering Kankakee.

“I have a pretty good product. I put all I have into it. I have a passion for it. It’s not like work. I put love into it because I’m concerned about everything, every detail. I always look out for others, and this is another way for me to do that,” said “Brother” George Smith, owner of Brother George’s BBQ.

Smith started his business when he was laid off from his job at the county. He took that as an opportunity to follow his dream of cooking, serving, and making people happy.

“I put love into it because I’m concerned about everything, every detail. I always look out for others, and this is another way for me to do that,” said Smith.

This BBQ has become a loved member of the community and has attracted many regulars who can’t get enough.

“We saw him set up last winter and we started coming then, and it was good, so we just kept coming every week. He’s a personable guy and you get to know him when you come up here once a week,” said Steve Gillespie, Beaupre Towing.

Smith credits some of his returning customers to his special, homemade sauce. He has called it the comeback sauce because he says once you taste it you have to come back for more. But while his sauce is great, he says it’s the way he cooks the meat that really sells his food.

“I have an awesome chicken. There’s nothing worse than a lot of dry meat with a lot of wet sauce, so my chicken is really moist,” said Smith.

Only time will tell what the future holds for Brother George’s BBQ. While he loves his location now and the customers he gets out to his food truck, he would love the opportunity to work with investors and possibly become a brick and mortar store.
